No Dairy, Sugar or Eggs Kale Puff Recipe

Delicious and nutritious snack that you can have on hand all week long for you little toddler. I've not been able to find a store-bought brand of the delightful little puffs for my toddler to eat with her restricted diet. So with some searching online and trial and error, below is the recipe that has worked for me.

The Ingredient Line Up

  • 1 Cup Chopped Kale (Or Spinach)
  • 2 Flax "Eggs" (2 Tbsp of Ground Flax  + 6 Tbsp of Warm Water and let sit for 5-10 Mins)
  • 1 Tbsp coconut oil
  • 1/2 Cup Applesauce
  • 1/2 Cup Quinoa Flour (Just Blended Uncooked Quinoa or Really Finely Blended Oats)
  • 1 tsp baking powder

The Recipe To-Do

  • Preheat oven to 350
  • Take all of the above ingredients and put in a blender and blend until nice and smooth.
  • Line a baking sheet with parchment paper.
  • Use a piping bag or a plastic bag (and just cut a small corner out). Put your blended mixture into the bag and then squeeze little dots out onto the parchment paper - as big or as small as you would like.
  • Bake at 350 for 10 mins. And then lower the over temperature to 250 and bake for another 20-30 mins.
  • Enjoy!
